Made from the blue agave plant, tequila comes from the town
of Tequila Province of Jalisco, Mexico.
Although the blue agave is often mistaken for a cactus, it is
more closely related to the lily. All tequila is fermented in
large vats for 72-150 hours, after which it is distilled twice
and either bottled or transferred to oak casks to begin the
aging process.
Tequila must be at least 51% blue agave. The remaining
percentage usually comes from the addition of fermented and
distilled sugar syrup, although premium tequilas are made from
100% blue agave and are stated so on the label. Because the
agave plant must grow for at least five years before
harvesting, tequila can sometimes be difficult to obtain. We
assure you that as they become available to us, we will make
them available to you.
Tequila like wine, if drank in moderation, can decrease the
levels of bad cholesterol in the blood. Remember, though, that
if you decide to drink half the bottle, the results may not be
favorable.
